A plant-based interpretation inspired by Moroccan cooking, with carrots, chickpeas, cumin and ginger.

#QueenOfQueensFood

Moroccan tagines take many forms, including versions with vegetables and dried fruit. This recipe draws on that conversation between spice, sweetness and gentle moist cooking; it is not presented as a fixed traditional formula. A heavy casserole can replace the earthenware pot. Apricots soften in the sauce while almonds are added at the end for crunch.

Difficulty: Easy

Ingredients and quantities

  • 480 g cooked, drained chickpeas
  • 300 g carrots
  • 300 g canned peeled tomatoes
  • 150 g onion
  • 80 g dried apricots
  • 30 g almonds
  • 25 g extra-virgin olive oil
  • 1 tsp cumin, 1/2 tsp ground ginger and 1/4 tsp cinnamon
  • 250 ml water; salt, pepper and a little fresh coriander

Method

  1. Slice the onion and cut the carrots into even pieces. Heat the oil in a casserole and soften the onion for 5 minutes.
  2. Stir in the spices for 30 seconds, then add carrots, crushed tomatoes and water. Cover and simmer for 15 minutes.
  3. Add chickpeas and halved apricots. Cook for another 15 minutes, until the carrots are tender, adding a little water if needed.
  4. Toast the almonds in a dry pan for 3 minutes. Season and finish with almonds and coriander. Optional couscous or bread is additional.

Tips and variations

Keep the apricots in pieces so their sweetness comes in small bursts. Only put an earthenware tagine on the hob if its manufacturer allows it.

Allergens

Almonds; dried apricots may contain sulphites.
