#QueenOfQueensFood

In a taco, the tortilla is both wrapper and flavour. Mexican taco traditions include countless fillings; this cauliflower-and-avocado combination is our plant-based interpretation. Smoked paprika gives a toasted note while lime and raw cabbage contrast with the soft beans. Assemble just before eating.

Ingredients and quantities

  • 12 small corn tortillas, about 300 g total
  • 600 g cauliflower florets
  • 400 g cooked, drained black beans
  • 200 g avocado flesh
  • 150 g purple cabbage
  • 25 g extra-virgin olive oil
  • Juice of 2 limes
  • 1 tsp smoked paprika and 1/2 tsp cumin
  • Fresh coriander, salt and chilli to taste

Method

  1. Toss the florets with 20 g oil, paprika, cumin and a little salt. Roast at 210 °C conventional for 25–30 minutes, turning halfway.
  2. Heat the beans with the remaining 5 g oil and 2–3 tablespoons water for 5 minutes.
  3. Blend avocado with half the lime juice and a little water to make a cream. Finely shred the cabbage and dress with the remaining lime and a pinch of salt.
  4. Warm the tortillas in a dry pan for 20–30 seconds per side. Fill with beans, cauliflower, cabbage and avocado cream. Finish with coriander and chilli.

Tips and variations

Tortillas should bend without breaking: wrap them in a clean cloth after warming. Calories assume three tortillas of approximately 25 g each per serving.
